Here’s a peek at the finished dish! Doesn’t it look amazing?
Okay, let’s get down to business. Here’s what you’ll need to whip up this flavorful pulao:
Ingredients:
- 1 cup Basmati Rice, rinsed well
- 2 tablespoons Vegetable Oil or Ghee
- 1 teaspoon Cumin Seeds
- 1 medium Onion, finely chopped
- 1 teaspoon Ginger-Garlic Paste
- 1/2 cup mixed Vegetables (Carrots, Peas, Beans, Potatoes – whatever you like!), diced
- 1/4 cup Cauliflower florets
- 1 Green Chili, slit (optional, for a little kick!)
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Red Chili Powder (optional)
- 1 teaspoon Garam Masala
- 2 cups Water
- Salt to taste
- Fresh Cilantro leaves, for garnish
Instructions:
- First, make sure your rice is nicely rinsed! This helps remove excess starch and ensures fluffy pulao. Soak the rice in water for about 15-20 minutes while you prep the veggies.
- Heat the oil or ghee in a pot or Dutch oven over medium heat. I personally love the richness that ghee adds, but oil works just fine too!
- Add the cumin seeds and let them splutter. This releases their aroma and infuses the oil with flavor.
- Add the chopped onion and sauté until it turns light golden brown. This is an important step – don’t rush it! The browned onions add a lovely sweetness to the pulao.
- Stir in the ginger-garlic paste and sauté for another minute until fragrant.
- Now, add all the mixed vegetables and cauliflower florets. Sauté for about 3-4 minutes, stirring occasionally.
- Add the green chili (if using), turmeric powder, red chili powder (if using), and garam masala. Sauté for another minute, making sure the spices are well combined with the vegetables.
- Drain the soaked rice and add it to the pot. Gently sauté the rice with the vegetables and spices for about 2 minutes. This helps to slightly toast the rice, which contributes to its fluffy texture.
- Pour in the water and add salt to taste. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot tightly with a lid, and simmer for about 15-20 minutes, or until the rice is cooked through and all the water has been absorbed. Don’t peek! Let the steam do its work.
- Once the rice is cooked, turn off the heat and let it rest, covered, for another 5-10 minutes. This allows the flavors to meld together and prevents the rice from becoming sticky.
- Fluff the pulao gently with a fork. Garnish with fresh cilantro leaves.
- Serve hot and enjoy! This pairs perfectly with yogurt raita or a simple side salad.
Seriously, you guys have to try this recipe! It’s so easy and satisfying. Let me know in the comments if you give it a whirl, and be sure to share any variations you come up with. Happy cooking!
