Veg Momos with ChutneyHere’s what you’ll need:

Ingredients for the Dough:

  • 2 cups all-purpose flour
  • ¾ cup water (more or less, as needed)
  • Pinch of salt

Ingredients for the Vegetable Filling:

  • 1 cup finely chopped cabbage
  • ½ cup finely chopped carrots
  • ½ cup finely chopped onions
  • ¼ cup finely chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili, finely chopped (optional)
  • 1 tablespoon soy sauce
  • 1 teaspoon vinegar
  • ½ teaspoon black pepper
  • Salt to taste
  • 2 tablespoons oil

Ingredients for the Chutney:

(For this, I’m going to suggest a basic tomato chutney recipe - feel free to use your own!)

  • 4 ripe tomatoes, roughly chopped
  • 1 small onion, roughly chopped
  • 2 cloves garlic
  • 1 inch ginger
  • 1-2 green chilies (adjust to your spice preference)
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • Salt and sugar to taste
  • A squeeze of lemon juice

Instructions:

  1. Making the Dough: In a large bowl, combine the flour and salt. Gradually add water, mixing until a smooth, non-sticky dough forms. Knead for about 5-7 minutes. Cover the dough with a damp cloth and let it rest for at least 30 minutes. This is really important for a good texture!
  2. Preparing the Filling: Heat oil in a pan. Add the minced garlic and grated ginger and sauté for a minute until fragrant. Add the chopped onions and sauté until translucent. Add the remaining vegetables (cabbage, carrots, bell pepper, and green chili if using) and sauté for 5-7 minutes, until slightly softened.
  3. Add the soy sauce, vinegar, black pepper, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool completely. This prevents the dough from getting soggy.
  4. Shaping the Momos: Divide the dough into small equal-sized balls. Roll each ball into a thin circle (about 3-4 inches in diameter). Place a spoonful of the vegetable filling in the center of the circle.
  5. Fold the momo in your preferred shape. There are tons of videos online showing different techniques! You can make half-moon shapes, pleated designs, or even just pinch the edges together to seal. Make sure the edges are sealed tightly to prevent the filling from leaking out.
  6. Frying the Momos: Heat oil in a deep pan or wok. Fry the momos in batches over medium heat until golden brown and crispy on all sides. Be careful not to overcrowd the pan.
  7. Remove the fried momos and drain on paper towels.
  8. Making the Chutney: Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Then add ginger and garlic. Fry for a minute. Add chopped tomatoes, salt and sugar. Cook until the tomatoes become soft and mushy and the water has evaporated. Let the chutney cool slightly, then blend it to a smooth paste. Add lemon juice. Adjust seasoning to taste.
  9. Serve the hot, crispy momos with the chutney. Enjoy!
