- 3 medium ripe bananas, mashed (about 1 1/2 cups)
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 2 teaspoons vanilla extract
- 1 1/2 cups almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions:
- First, preheat oven to 350°F (175°C). Grease loaf pan. If no grease, use parchment paper! Easy cleanup, remember?
- In large bowl, mash bananas. Really mash them! No big chunks.
- Add melted coconut oil, maple syrup, and vanilla extract to the mashed bananas. Mix well. This important part, make sure everything combine!
- In same bowl (one bowl only!), add almond flour, baking soda, and salt. Mix until just combined. Do not overmix! Overmixing bad for gluten-free bread.
- If using, stir in walnuts or chocolate chips. Chocolate chips always good choice, yes?
- Pour batter into prepared loaf pan. Spread evenly. Top can decorate with more nuts or chocolate chips. Fancy!
- Bake for 50-60 minutes, or until toothpick inserted into center comes out clean. Every oven different, so watch carefully. If top gets too brown, cover with foil.
- Let cool in pan for 10 minutes before transferring to wire rack to cool completely. This important! Hot bread fall apart.
- Slice and enjoy! Serve with tea, or coffee. Good any time of day. Leftover store in airtight container. Still good next day, promise! Even better maybe, flavors meld together.
