Think bright colors, delicious flavors, and a presentation fit for a princess. So, let’s get started, shall we? I’m thinking something sweet, something vibrant, something… magical!
For this culinary adventure, we’re making… Rainbow Mochi Cake! It’s sticky, it’s chewy, it’s colorful - just like a Disney movie! You gonna love it, promise! The vibrant colors will look like they jumped right out of a cartoon and onto your plate!
Rainbow Mochi Cake Ingredients:
- 1 box (16 ounces) Mochiko sweet rice flour
- 2 cups granulated sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups milk (or coconut milk for extra flavor!)
- 4 large eggs
- 1/2 cup melted butter, unsalted
- 1 teaspoon vanilla extract
- Food coloring (red, orange, yellow, green, blue, purple - the more colors, the better!)
- Optional: 1/2 cup shredded coconut for topping
Instructions for Our Magical Rainbow Mochi Cake:
- First, preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan. Make sure you grease it good, okay? We don’t want any sticky surprises later!
- In a large bowl, whisk together the Mochiko flour, sugar, baking powder, and salt. Whisk it, whisk it good! Make sure everything is nice and even.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract. Mix it until all combined. You want smooth, not lumpy, okay?
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix! Overmixing make the mochi cake tough, and we don’t want that!
- Now, divide the batter evenly into six separate bowls. Each bowl get one color of food coloring. Add the coloring and stir until each bowl is nicely tinted. Make them pretty!
- Pour each color of batter into the prepared baking pan, one after the other, creating stripes of color. Don’t worry if they blend a little, that makes it even prettier! Like a watercolor painting, yes?
- If using shredded coconut, sprinkle it evenly over the top of the batter. Coconut makes everything better, almost like magic dust!
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Watch it closely! Ovens are all different, okay?
- Let the cake cool completely in the pan before cutting into squares. Patience, patience! It’s hard, I know, but trust me, it’s worth it!
